Cost Control and Financial Analysis in the Hospitality Industry

Class Meeting Time: asynchronous
Class Location: internet, except for testing

Course Prerequisites: ACCT 200 (or equivalent Accounting course)
and CFS 252 (or competence in one of the following spreadsheet programs:
Lotus 1-2-3; Microsoft Excel; or Quatro Pro).

Course Description

“Study of the financial aspects of hospitality operations to include budgeting, forecasting, financial analysis, food and labor costs, beverage control, inventory control, and the Uniform System of Accounts for Hotels and Restaurants.” -- WKU Catalog, 2010-2012

Course Objectives

Successful students in this course will:
  1. Communicate with and interact with the course instructor and with each other in an online format.
  2. Define and describe the control function of management.
  3. Recognize the importance of cost control in the everyday management of a hospitality operation.
  4. Use a managerial frame of reference in applying principles of forecasting and cost-control.
  5. Develop and apply the problem-solving skills needed in a typical hospitality operating environment.
  6. Prepare and interpret computer-generated spreadsheets.
  7. Make managerial decisions based on analysis of cost and financial data.

Required Course Materials

Grading

*All individuals are expected to conduct themselves in a professional manner. For the internet section(s) of this course, things to be considered include, but are not limited to: following directions for submission of homework/assignments; appearance of assignments; professional behavior and/or wording in postings in on-line discussions and message boards, etc. Unprofessional behavior such as, but not limited to, academic dishonesty or rudeness toward ANY person will be considered serious violations of this standard and will lower your grade accordingly!

**Professionalism & Participation count as 20% of your course grade, and are calculated as follows:

  1. 25 possible points for "Professionalism" - including things like timeliness of assignments and e-mail; positive attitude; spelling/grammar in discussions, etc. (These points are added to each student's "P/P" total by the instructor at the end of the course.)
  2. 5 participation points for each of 15 weeks:
    • everyone who checks in with the instructor and/or browses the course site automatically gets 5/5 points for Week #1, while people are just finding their way around;
    • during a week when there are no Discussion topics posted, everyone gets an automatic 5/5, provided they check the course site for notes, assignments, solutions, etc. and submit homework on time;
    • grade of 0/5 on any week means student didn't participate at all;
    • grade of 5/5 on any week means student participated several times on most questions -- and probably on several different days (during the right week - not after deadline);  also means that student's contribution on discussion topics was relevant, meaningful, and conducive to furthering discussion (not just "I agree").  
    • grade of 1/5 thru 4/5 are common.

Academic Honesty

“Students who commit any act of academic dishonesty may receive from the instructor a failing grade in that portion of the course work in which the act is detected or a failing grade in a course without possibility of withdrawal. The faculty member may also present the case to the Office of Student Life for disciplinary sanctions.” -- WKU Catalog, 2010-2012.

Penalty for Academic Dishonesty in this course will include ALL of the following: grade of '0' on the assignment/test in question; automatic grade of '0' for Professionalism/participation; AND written report of the incident to the Office of the Dean of Student Life.

In addition, in any case where a previous incident has been reported involving the student, penalty will be a grade of 'F' for the course AND a written report of the incident to the CFS Department; to the Dean of the College of Health & Human Services, and to the Office of the Dean of Student Life (along with a written request for disciplinary sanctions at the University level).

The application of academic integrity in CFS 354 is as follows: DON'T JEOPARDIZE YOUR ACADEMIC FUTURE BY PARTICIPATING IN, OR FACILITATING, ANY OF THE AFOREMENTIONED ACTIVITIES. If you have any doubts about the integrity of an action or behavior, it is better to err on the side of safety -- don't do it.
