Item/Collection Note: Origins of the Kentucky stew, burgoo, are unknown but the word is generally attributed to Gus Jaubert who rode with General John Hunt Morgan during the Civil War. Ingredients and proportions of the meat and vegetable dish are as varied as the cooks who make it, but all agree that cooking it in kettles over open fires yields best results.
